Sweet Potato Salad Recipe | No Mayo Salad

Ingredients
2-3 large sweet potatoes washed, peeled & boiled
1 red bell pepper washed & diced small
1 medium red onion  washed & diced small
1 - 2 small carrots washed, peeled & boiled

Dressing:
⅔ cup hung curd
2 Tablespoons Dijon mustard
2 Tablespoons apple cider vinegar
2 Tablespoons freshly squeezed lemon juice
2 to 3 teaspoon paprika
¼ teaspoon cumin
Salt and black pepper to taste

Garnishes:
Fresh cilantro or coriander leaves 

Method

Cut the sweet potatoes and carrots into circular or  bite size cubes.

Add the bell pepper, red onion, carrots and sweet potato to a large bowl.
In a blender add all the ingredients  mentioned for the dressing and blend till well combined.

Add the  dressing and stir until all the veggies are coated.
Garnish with coriander leaves cover and refrigerate for at least one hour. 
Taste after the hour and add additional seasonings to meet your taste preference.
