Dahi Kabab | Dahi Ke Kabab (Yogurt Kebab)


Ever  since I got the  Air fryer I cant stop trying recipes which I had earlier put on hold as they were immensely tasty but deep fried.  Yesterday I came across the Dahi kabab recipe by cookingshooking  and could not control myself and made these in a jiffy with a few additions. They were so delicious and the taste was enhanced by the fact that they were healthy as not deep fried. 
The  Dahi kababs are crisp on the outside and soft, with a melt-in-the-mouth inside. The kababs have a  unique taste with a punch of flavors from the herbs and garam masala. I am sure once you make these, you wont go back to the traditional restaurant dahi kabab anymore. Serve these with a side of Mint chutney  and some fresh rings of onion. 

Ingredients 
Yogurt - 1 kg
Chopped Green Chili - 2 small
Chopped Coriander (leaves & stem) - 2 tbsp
Cumin Powder - 1/4 tsp 
Garam Masala - 1/4 tsp
Roasted Gram flour - 2 tbsp
Oats Flour or Quinoa Flour  - 2 tbsp
Grated or finely chopped  Onion - 1 small
Black Pepper - 1/4 tsp
Grated Cheese - 1 cube
Cornflakes/breadcrumb/ruskpowder to coat

Method 
Hung curd - 
Place the 1 kg curd in a Muslin cloth and place it on a strainer over a large bowl. 
 Squeeze the water by tightening the cloth and let it remain in the strainer in the refrigerator for 6 hours or even over night.(Do not miss the step or use the curd before the water is completly strained) 

For the Dahi Kebab
Step 1
Once done transfer the hung curd in a large bowl add  green chili, coriander and onions. 
Step 2
Add salt, cumin powder, garam masala, pepper powder 
Step 3
Add roasted gram flour, oats flour  and grated cheese. 
Step 4
Using your hand combine the  ingredients until all are combined. Add extra gram flour and oats powder incase you find the mixture too sticky.

Coat your hand with a little oil and then make small round dahi kebab. 

Step 6
Coat all the kebab with some crushed cornflakes or breadcrumbs. 
(I have used cornflakes) 
Step 7
 
1. Deep Frying 
In a Kadai or deep frying pan, heat oil on and add the  kebabs gently and  fry them until golden brown. 

OR 

2. AIR-FRYER 
Place the kebabs into the basket of air fryer( 5 to 6 kebabs) and brush them with little oil on top. Air fry them for 10 minutes at 180C till you get a golden colour on top. Do check the kebabs at 5 minute mark and one can  brush them with more oil in half time. After the 10 min mark, do invert the kebabs and one can additionally airfry it for 5 to 7 minutes. 


Serve the kebabs with green chutney and onion rings.
