Thai Crunch Salad with Peanut Dressing
Crunchy, colorful, and packed with flavor, this Thai-style salad is a fresh mix of cabbage, carrots, bell peppers, and green onions. Tossed in a creamy peanut dressing with a hint of sweetness, spice, and zing, it’s the perfect quick fix for a light lunch or vibrant side dish.
Ingredients
1.5 cups cabbage thinly sliced or 1 cup of lettuce leaves
1.5cups red cabbage thinly sliced
1 cup carrots thinly sliced or chopped
1 small red pepper thinly sliced or chopped
1 small yellow pepper thinly sliced or chopped
4 green onions chopped
Dressing
1/3 cup peanut butter crunchy or smooth
1 Tbsp white vinegar
2 Tbsp lemon juice
2 Tbsp honey
1 Tbsp sesamne oil
1/4 cup water
1 garlic clove minced
1 Tbsp ginger minced( optional)
1/2 tsp chili flakes
salt
Garnish
1/4 cup coriander leaves
1/4 cup roasted peanuts
Sesame seeds
Method
Add all the veggies to a mixing or salad bowl.
Now make the dressing by combining all the ingredients and whisking it till well combined.
Now add the dressing to the veggies and mix well.
