Low-carb Pumpkin Halwa
Pumpkin is popularly known as Kaddu in India and is used in many different ways. Popularly used in sabzi and curry, indicates its a very versatile vegetable. This unique vegetable-based dessert turns stupendously toothsome as inherently has a mild sweetness which adds to the dessert flavour.
Handcrafted by sautéing grated pumpkin, sweetener, dessicated coconut, almond flour, cardamom powder and saffron leaves a lingering taste in your mouth for quite some time. With those oozing flavours of ghee, dry fruits, Kaddu Ka Halwa Recipe or Pumpkin Halwa revitalises your appetite in a beautiful low-carb way.
This recipe can definitely be made rich loaded with sugar but alternatively one can use low carb sweetener or even jaggery(for people not on low-carb) which gives the same feel and texture but cuts down the extra calories and carbs.

So let's jump into the ingredients
300g Pumpkin
1/2 cup Dessicated coconut
1/2 cup Almond flour or finely ground almonds
Cinnamon powder 1/2 Tsp
Cardamom powder 1/2 Tsp
Hot water 3/4th cup*
Erythritol 1/2 cup or any other low-carb sweetener *
Saffron strands
Ghee/Clarified butter 1/4 cup*
Salt
Dry fruits for garnish
Note
*I did not add the amount of hot water at once but in intervals of 2 minutes. I recommend this method so that the Halwa doesn't become watery as I used less than the stated in the original recipe.
* The original recipe called for 1/4 cup of ghee but one can reduce this amount based on the richness one desires .
* Low-carb sweetener is in the original recipe and if not on low carb diet, substitute it with powdered jaggery.
Method
Step 1
Wash, clean and peel the pumpkin skin and grate the pumpkin( the most time consuming part of the recipe).
In a pan add ghee followed by the grated pumpkin. Cover the pan and let it cook for 7 to 9 min.
Step 3
Add the dessicated coconut, almond flour and hot water. Mix well and let it cook for another 3 to 4 min.
Add the sweetener, cardamom powder, Cinnamon powder, salt and saffron water
(just add some saffron strands to a bowl with some warm water). Let it cook till it becomes a Halwa consistency.
Garnish with some dry fruits and saffron strands.
Serve hot.
