Loaded Cauliflower Casserole
Loaded Cauliflower Casserole is the perfect swap for twice baked potatoes and it is easy and unbelievably tasty. It's a great addition to not only the people on a low carb diet but all.
Serves: 3 - 4
Ingredients
400 g cauliflower
100 g cabbage
100 g Capsicum
80 g onion
2 small sized carrot*
6 - 7 cloves of garlic
Sour Cream *
Cheese(cheddar/mozarella) *
1Tbsp Olive oil
2 Tbsp melted Butter
Seasonings
Salt
Chilli powder/ paprika
Pepper powder
Thyme
Oregano
Soft Crumb
Almond flour + cheese (blend in a food processor)
Or
If not on low carb or keto diet one can use breadcrumbs.
Note
* carrot is optional
* the amount of cream and cheese will depend on how rich and creamy you prefer the casserole. I have used 1/4th cup of cream and 1 cup of cheese.
* can top the casserole with bacon/ sausage or salami slices
Method
Preperation
Cut the cauliflower into florets, chop the cabbage and vertically cut the carrot into two. Finely chop the onions and Capsicum.
Step 1
In a bowl add the florets, cabbage and carrot and steam for 20 minutes on high.
Step 2
Saute the onions and capsicum with 1tbsp oil, chilli powder, salt and pepper till the veggies soften.
Step 3
Add the steamed veggies to a food processor and process until fluffy. Add the onion capsicum mixture, butter, garlic cloves,sour cream and the seasonings and process until it resembles the consistency of mashed potatoes.
Remove the mashed cauliflower to a baking bowl and add half of the cheese and mix.
Top it with the soft crumb or breadcrumb or just cheese and herbs.
Bake for 20 to 25 minutes at 180C or till the cheese melts.
Broil for 5 to 7 minutes(optional)
