Cauliflower Poha


Poha is a staple breakfast for The North Indians and is definitely a healthier option in breakfast. It combines flattened rice with veggies and potatoes and is topped with some onions and crisps. To suit the keto/ low carb diet one just substitutes the flattened rice with the cauliflower rice and avoids the potatoes completely. 
The original recipe which is strictly keto is by the  headbangers kitchen original Recipe. I have just slightly modified it with the addition of carrots and Capsicum. 

Ingredients 
serves 2

300 g cauliflower 
60 grams onion finely diced 
1 small Carrot finely diced 
Half a Capsicum finely diced 
30 grams Peanuts( Dry roast) 
1 Tbsp Butter/ Ghee
1 Tbsp olive oil 
1 Tsp Mustard Seeds
1 Tsp Tumeric
1 to 2 Green Chilly
Curry Leaves 
Salt to Taste
Coriander and lemon juice for garnish

Note 
One can add freshly grated coconut for an addition of texture in the poha but it is completely optional. 

Method
Step 1
Prep the Cauliflower 
Separate the cauliflower into florets and rice the florets in a food processor. 

Step 2 
In a pan heat up 1 tbsp olive oil with 1 tbsp butter and add in the mustard seeds and once they start popping add in the curry leaves and the onions.Add the carrot and Capsicum and cook until they soften. 

Step 3
Season with some salt and tumeric and fry out the spice.Then add in the peanuts and green chillies and cook for a minute. 

Step 4
Add in the cauliflower rice, season with salt, add a splash of water and cover and cook till tender.

Step 5
After the cauliflower is cooked garnish with some freshly chopped coriander, roasted peanuts and a squeeze of lime juice.
