Low-Carb Vegetable Paprika Curry
The vegetable paprika curry is loaded with good-for-you ingredients. It’s made with plenty of veggies that have simmered in a paprika packed rich coconut milk curry. The paprika curry and turmeric cauliflower rice seems to be a match made in heaven but is also enjoyable with boiled or red rice.

Ingredients
Olive oil - 1Tbsp
Butter - 2 Tbsp
Onion - 1large nos
Red/Green Bell peppers* - 2nos(small)
Beans*-10 pieces
Carrots* - 2 medium size
Cottage Cheese/Paneer - 100 g
Garlic chopped-1. 5 Tbsp
Thick Coconut Milk - 1.5 cups
Coriander stems finely chopped - 2 to 3Tbsp
Fresh Cream- 2 Tbsp
Water* - 1 to 1.5 cups ( can add more based on the preference of thick or thin curry)
Seasonings
Salt
Chilli powder
Pepper
Paprika Powder* (1Tbsp)
Notes
*The choice of vegetables is left to the individual as one can add broccoli, zuchinni,peas, cauliflower, potatoes or any other veggies.
*The amount of water for the curry will depend on how thick or thin the curry is desired as one can add more coconut milk if you desire a thick curry and reduce the water.
*The amount of chilli powder and paprika will depend on your spice level but 1Tbsp is minimum.
Method
Step 1
Peel the onion in cubes and separated and rough chop the bell peppers, carrot and beans(large pieces). Finely chop the garlic and the Coriander stems.
Step 2
In a pan add oil, followed by garlic saute well. Add 1 Tsp of chilli powder and saute. Add the veggies and coriander stems followed by salt and pepper. Sauté until partially cooked and very fragrant, about 9 to 10 minutes. Reduce heat to low if anything is burning or getting too brown. Set aside in a bowl.
Step 3
In the same pan add 2tbsp butter and after its melted add the coconut milk, 1Tbsp paprika and water. After 2 to 3 min add the sautéed veggies. Cover the pan and let it cook on low for another 5 min.
Step 4
Taste and add salt and pepper.
Let the veggies soften and add the paneer and cream.
Let it come to boil.
Taste and serve it hot with rice/cauliflower rice.
