Air-Fried Eggplant Fries|Brinjal Fries |Fries

Crispy ,crunchy and flavorful, these  Eggplant Fries are healthy and require just spraying of oil. They are so crunchy thanks to the bread crumb coating and the fries also helps with any cravings you might be having for fries in general.

The air- fryer has become my  go-to appliance for frying,  baking and roasting  because you can get such delicious  food without having to use a ton of oil.

 I am sharing two brinjal  fries recipe one using gram flour and second using almond flour but  honestly the former is definitely crisper. The almond flour crisps take  slightly longer  in the air-fryer to crisp but once you get your hands on it, trust me "no one can have just one."

             Fries with  Gram flour or Besan 

Ingredients 
Eggplant - 1 nos
Gram Flour - 2 cups
Bread Crumbs or rusk powder - 1/2 cup
Oil for brushing

Seasonings 
Salt
Chilly flakes 
Oregano
Chaat masala 

Method

Step 1
Slice eggplant into 1/2-inch rounds, then cut each round into 1/4-inch sticks. Pat dry.

Step 2
Combine bread crumbs and all the seasonings in a shallow bowl. 
Pour a couple of tablespoon gram- flour into a second shallow bowl. 
Make a thick batter using gramflour, water and salt  in a third bowl.

Step 3
Dip eggplant sticks in flour(bowl 2), then in the batter (bowl 3 )and then coat with bread crumb mixture (bowl 1) . Place on a plate and let rest for 5 minutes.

Step 4
Preheat an air fryer to 180 degrees C.

Step 5
Place eggplant sticks in the basket and brush a little oil .While placing it in the basket make sure they are not touching; cook in batches if necessary.
Cook in the preheated air fryer for 8 to 10 minutes. Shake basket and continue cooking to desired crispiness, an additional 4 to 6 minutes.

The key is to serve it hot and add a  generous amount of chaat masala.


                Fries with Almond Flour

Ingredients 
Eggplant - 1 nos
Almond flour - 1 cup
Egg -2  nos
Oil for brushing

Seasonings 
Salt
Chilly flakes 
Oregano
Black pepper 
Chaat masala 

Note - one can add garlic powder, onion powder or any other seasoning. 

Method 

Step 1
Slice eggplant into 1/2-inch rounds, then cut each round into 1/4-inch sticks. Pat dry


Step 2
Combine almond flour and all the seasonings in a shallow bowl and beaten eggs in another shallow bowl. 

Step 3
Dip eggplant sticks into the beaten egg  then into the almond flour mixture ensuring they are coated completely. 

Step 4
Preheat an air fryer to 180 degrees C.

Step 5
Place eggplant sticks in the basket and brush a little oil .While placing it in the basket make sure they are not touching; cook in batches if necessary.
Cook in the preheated air fryer for 10 to 12 minutes. Shake basket and continue cooking to desired crispiness, an additional 4 to 5 minutes.
The key is to serve hot and add generous amount of chaat masala before serving.
