Paneer Masala in Banana Leaf |Vegetarian Recipe|Paneer Recipe
The Paneer Masala in banana leaf is a take on the fish preparation made in Kerala called "Meen Pollichathu" which is basically fish cooked in banana leaf. The cooking of the paneer in the banana leaf gives a traditional touch and also makes the paneer ultra soft. It tends to have strong "masala" flavours but paired with some salad balances out the flavours.

How to make herbed paneer
So let's jump into the ingredients ;
Ingredients
Paneer/Cottage Cheese-250g(Plain/Herbs)
Banana leaf
Marination
Coriander seeds - 4Tsp
Black peppercorns-1/2Tsp
Dried Red Chillies - 3 to 4
Garlic - 6 to 7cloves
Onion - 1 small
Oil- 2 Tbsp
A dash of Lemon juice
Water
Seasonings
Salt
Chilli powder
Garam masala
Ginger powder
Method
Step 1
In a pan add the Coriander seeds, peppercorns, Chillies and garlic. Dry roast and shift to a blender. Add all the remaining ingredients of the marinate and Seasonings.
Blend well to form a thick paste.
Step 2
Marinate the paneer with the paste (large chunks/small cubes) and keep aside for 10 minutes.
Step 3
To make the banana leaf flexible and easy to use place it on a pan on the stove and swiftly pat it all around.
Step 4
Wrap the paneer in the banana leaf. Can seal it with toothpick or even thread. If the banana leaf is thin wrap it with aluminium foil.
Step 5
In a pan add some oil, place them in the pan and cover. Turn them over and cook till the leaves turn brown.
With aluminium foil it may take 7 to 9 minutes each side.
Serve hot
