African Peanut Stew with Fish
Mafe is a popular Senegalese spicy tomato peanut butter stew and there are different variations eaten in various West African countries. It can be made vegan, gluten-free and even keto but that is completely left to the choice of the individual.
It's a wholesome combination of veggies, tomato paste, spices, peanut butter and meat/tofu.

In this post I am making the stew with fish but if you are making it with chicken I will link the recipe at the end one can use.
So let's jump into the ingredients

Ingredients
- Basa Fish - 6 to 8 small square pieces
- Onion finely chopped - 1nos
- Red /Green Bell Pepper finely chopped- 1nos
- Garlic Cloves minced- 2Tbsp
- Ginger minced - 2Tbsp
- Tomato Paste*- 3Tbsp
- Carrots*- 2 medium size
- Peanut Butter *- 1/2 cup unsweetened creamy
- 5 cups vegetable broth/water
- Cauliflower Rice/Steamed Rice/Brown Rice
Seasonings
Salt
Cumin powder
Coriander powder
Paparika
Cayenne Pepper
Note
*The stew is traditionally spicy but as I could not get my hands on jalapeƱos, I made the tomato paste at home using 100gm of tomatoes and 2 green chillies.
*The original recipe calls for sweet potatoes/potatoes whereas I have used carrots. The choice of veggies is completely left to the individual.
* I did not use the store peanut butter whereas just blended roasted peanuts to a creamy consistency.

Method
Step 1
Marinate the pieces of fish with salt and black pepper. In a large pot over medium heat slightly fry the fish. Keep aside
Step 2
In the same oil add the onion, sprinkle with salt and cook for 3 minutes, until translucent. Add the garlic,ginger, cumin, coriander powder and cayenne pepper then stir together and cook for about 2 minutes. Add the bell peppers and carrots and cook for about 5 to 7 minutes.
Step 3
Add the tomato paste and stir together.
Add the peanut butter, vegetable broth/water and stir together till the peanut butter blends then bring to a boil. Reduce heat to medium-low, cover and cook for 15 minutes.
Add the fish and cook for another 20 to 30 minutes till the stew thickens.
Taste and add the the necessary spices and salt.
Boil uncovered for 5 minutes and serve warm with rice and a dash of lime juice.
