Whole Baked Cauliflower with Tomatoes
Whole roasted cauliflower, a great vegetarian baked dish for the holidays, special occasions or everyday cooking. It’s a delicious side or main dish and can be paired with chutney or salad.
Ingredients
For the Tomato Sauce
300 g Tomato
10 g Garlic
10 g butter
1 chilli(optional)
1 Tbsp Vinegar
1 Tsp Soya sauce
3 - 4Tbsp water
Seasoning
Salt
Pepper
Chilli flakes
Oregano
Other ingredients
1 cauliflower head (500 g)
2 teaspoons salt
1 tablespoon olive oil for basting
1 tsp crushed garlic for basting
1 tsp chilli flakes
Cheese ( preferably mozzarella)
Method
Step 1
To make the tomato sauce
Blend the garlic, chilli and tomatoes in a blender to make a puree, add water for just an easy blend and sieve the puree to remove seeds and pieces of skin and set aside.
If you like a little rustic sauce one can skip the sieving step.
Heat the butter in a heavy bottom saucepan and once melted add in the tomato and garlic puree.Cook down for 5-7 minutes stirring constantly.
Add in all the seasonings and vinegar and soya sauce.
Cook down till it's a nice sauce like consistency and then remove from the heat and let it cool.
Step 2
Place cauliflower in a large pot of water with some salt. Boil it for around 10 to 12 minutes.Remove drain and set aside.
Step 3
In a bowl mix olive oil,chilli flakes and garlic. Apply it all over the steamed cauliflower using a brush.
Step 4
Make a small vertical and horizontal cut on the surface or top of the cauliflower for the sauce.
Turn the cauliflower upside down and put some cheese into the crevices followed by the tomato sauce. Turn the cauliflower over and do the same till the entire cauliflower is coated.
Dress it with some butter, herbs, more cheese or seeds.
Note-
1. Suggestion turn the cauliflower over first and apply the sauce and cheese after which turn it over and apply on the cauliflower head.
2. The amount of cheese will depend on the individual. One can add more or less depending on the liking.
3. Mozarella is preferred due to the melting texture whereas processed cheese works fine too but it would not melt like the former.
4. The colour of the sauce will also depend on the tomatoes used.
Tranfer to a baking dish and bake for 30 to 35 minutes at 180 degree Celsius or until a knife easily pierces the core.

Broil for 5 to 7 min at 150 degree celsius(optional).
Serve with Coleslaw or Hung Curd salad
