Cauliflower Mash




It's the easiest and the yummiest recipe and goes well with just about any sizzler or gravy.

Ingredients
1 large head cauliflower cut into florets 
3 tablespoons unsalted butter
3 tablespoons sour cream
6 cloves garlic 
1 chillie( optional)
1/4 cup parmesan cheese/ Processed cheese 

Seasoning
Salt
Chilli flakes
Oregano 
Black pepper 

Method 

Step 1 
Place cauliflower florets in a large pot of boiling water. Boil it  for 15 to 20 minutes until tender. Remove and drain. Cover with a lid and set aside.
Step 2 
In a pan heat the 1 tbsp butter over medium high heat. Sauté garlic until fragrant (about 1 minute).
Step 3 
Blend cauliflower, garlic, remaining butter and chillie in a food processor until smooth consistency. You may need to do this in batches based on the size of the processor. 
Step 4.
In the same processor add the remaining ingredients - Cheese, sour cream and season with salt, chilli flakes,oregano and pepper and blitz.

Serve it with sizzler or any curry.
