Tandoori Cauliflower| Healthy Cauliflower Bake

Whole Roasted Tandoori Cauliflower is the perfect quick side dish that will complement any meal. The  cauliflower is tender and flavorful thanks to the perfect indian masalas used as marinade and  seasonings .This side dish can adapt to any dietary needs and is easy  and can be quickly whipped up during a busy weeknight dinner or can also be the centre- piece of a family dinner.

Ingredients

  • 1 cauliflower head (550 g)
  • 2 teaspoons salt 
  • 1 tablespoon olive oil for basting
  • 1 tsp crushed garlic for basting
  • 1 tsp chilli flakes
  • Cheese ( preferably mozzarella)

Marinade:

  • 1/2 cup Hung Curd
  • 1 to 3 teaspoons kashmiri chilli powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon ground cumin 
  • 1/2 teaspoon ground coriander
  • 1 teaspoon ginger grated
  • 1 teaspoon garlic grated
  • 1 tablespoon dried fenugreek leaves/ kasuri methi 
  • 1 tablespoon olive oil
  • Salt as per taste 
  • Water to get the marinade consistency

Method

Step 1
Place cauliflower in a large pot of boiling water with some salt. Boil it  for  10 to 12 minutes.Remove drain and set aside.
Step 2
In a bowl mix olive oil chilli flakes and garlic.  Apply it all over the steamed cauliflower using a brush.
Step 3 
 Make a small vertical and horizontal cut on the surface or top of the cauliflower for the marinade.
Step 4 
Mix all the ingredients for the marinade in a small bowl or one can just blend all together.Taste the marinade and add any additional seasoning.
 
Step 5 
Apply the marinade on the steamed cauliflower using a brush. Turn the cauliflower over to get any remaining marinade under the cauliflower. 
Top it with some cheese and turn it up side down and stuff the crevices  with cheese.
Note- suggestion turn the cauliflower over first and apply the marinade and cheese after which turn it over and marinade the head. 

Step 6 
Tranfer to a baking dish and bake for 30 to 35 minutes at 180 degree celsius.
Serve with mint chutney or raita.
