Dahi Baigan

A soothing Odia dish which is prepared with curd as its base and is paired with Pan fried Brinjal. The combination provides a lip smacking dish and is ready in no time.

So lets jump into the ingredients-


Ingredients 
Brinjal 1 medium (200gms)
Hung curd/Greek Yogurt 1/2 Cup+ 2Tbsp(if required) 
Oil
Water

Marination of the Brinjal 
1/2 Tbsp Oil
1 Tsp Chilli Powder 
1 Tsp Turmeric Powder
2 Tsp Cumin Powder 
Salt

Chilli Mixture 
2 Tbsp Olive Oil
2 Dry Red Chillies
1/2-1 Tsp Cumin Powder 
1/2-1Tsp Chilli Powder 
1 Tsp Coriander Seeds
1 Tsp Fennel Seeds
Asafoetida 

Method 

Step 1
Chop the brinjal in medium size pieces.
Marinate the brinjal and keep it aside for 10 to 15 minutes. 

Step 2 
In a pan add 1Tbsp Oil and pan fry the Brinjal till it is tender and cooked. 

Step 3
To make the chilli mixture take a small pan add oil, dry red chilli and the seeds. After 30 to 45 seconds on the heat remove and add the powders. Keep aside

Step 4
 In your mixing bowl add the chilli mixture followed by hung curd. Mix well and add water little by little to get the consistency one desires. Add in the salt and mix well.
Add the pan fried brinjal and give it a good mix. Serve it immediately or refrigerate for an hour before serving.
Note
1.The amount of water will depend on the consistency one desires. To thicken it add additional hung curd. 
2.One can give it an Indian Tadka or tempering  but that is completely optional.
3.I prefer serving it cold but that again is left upto the individuals liking.
