Broccoli Soup

BROCCOLI  SOUP

As the cold or winter season sets in so does soup on the dinner table. It is always good to try and have a variety in soups and Broccoli is one that tops the list as its not only creamy, cheesy  but healthy delicious and completely keto friendly. It needs simple ingredients which one will find in the kitchen cabinet so lets jump into the ingredients-

Ingredients 
  • cups Chopped Broccoli
  • 1 Onion Finely Chopped
  • 4-6 Garlic Cloves
  • 1 slit chilli
  • 3 to 4 tbsp Heavy Cream(based on the consistency and richness you desire)
  • 1/2 cup Cheese( Cheddar/ Processed)
  • 2 tbsp Oil 
  • 1 tbsp Butter
  • Water to just cover the florets in the pan

Spices

  • Black Pepper
  • Thyme
  • Oregano
  • Salt

Method 
Step 1 
Separate the Broccoli florets and  chop it up. 
Step 2 
Heat the oil and butter in a heavy bottom saucepan and then sautee the onions,garlic and chilli till they turn translucent.
Step 3 
Turn up the heat and add in the Broccoli.
Step 4 
 Add in thyme, oregano, pepper and salt.Once the bottom of the pan starts to turn brown deglaze with the water.
Step 5 
Bring up to a simmer and cook for 7 to 10 minutes on a low heat till the Broccoli becomes tender. 
Step 6 
Remove the chilli from the mixture.Use a blender or mixer and blitz the soup into a creamy consistency after it cools with the liquid. Add the cheese and cream and add more water if needed and blitz again. (Based on the consistency you want)
Step 7
Bring it back on the stove on a low heat  and cook it for few minutes and and check for seasoning as well.Serve it with some fresh pepper.
