Khatta Dhokla (with leftover Idli-Dosa Batter)
Readymade idli/Dosa batter - 250 gms
Paste of 2 green chilles
Salt - 1 tsp
Eno - 2 tsp
Red chilli powder
For Tempering dhokla
Oil 2 tsp
Mustard seeds 1 tsp
Sesame seeds 2 tsp
Asafoetida
Coriander leaves handful
Curry leaves few
Green chillies ( chopped)
Method
1. Prepare the steamer:Take a idli steamer or deep pan/ deep kadai. Pour around 2 glasses of water and switch on the Flame.
2.Grease the plate or cupcake mould with oil in which you want to put the idli batter for steaming.
3.To prepare the dhokla batter:In a mixing bowl put readymade dosa/idli batter, add
salt & chilli paste to it. Mix it well.
4.Add Eno in the idli batter when you are
ready to steam the dhoklas. Now add Eno to the batter and mix it well. Immediately
pour it onto the prepared greased plate or mould.
5.Place it inside the steamer. Cover the lid.Let it steam on high flame for around 12 to 15 minutes. Switch off flame let remain inside the steamer for a while. Carefully remove the plate and let it cool a bit.
6.Prepare tempering/tadka:Take a tadka pan add oil and then add mustard seeds
and let splutter. To this add seasame seeds,chopped green chilli,curry leaves, the asafoetida and and immediately cover it.
8. Pour this tadka over steamed dhoklas evenly with the help of a spoon.Garnish with coriander leaves and Serve with some green chutney.
