Coriander and Coconut Noodle Soup

Ingredients
Serving 2
For the coriander coconut broth:30g coriander
3-5 garlic cloves
1-inch piece of ginger
1 -2green chilli
1 tin of coconut milk
250 ml water
Other
2 portions of cooked noodles
Veg of choice (steamed broccoli, green peas, boiled and sliced carrots)
Half a lime
Olive oil
Salt and black pepper
Garnish
Sesame seeds
Sliced spring onions
Chopped garlic
Chilli oil( optional)
Crispy onions or paneer
Method
Add all of the ingredients for the broth to a blender and blend until smooth.
Now add oil in a pan and pour the broth into a large pot with a lid. Bring to a gentle simmer and then add the noodles and veg. Season with salt and black pepper and pop the lid on and leave to cook for a few minutes.
Once the veg is tender, finish with a squeeze of lime, to taste.
Now spoon the soup into bowls and add a tadka or garnish.
For the tadka/ garnish
Prepare the tadka by adding oil to a small pan. Add sesame seeds , sliced spring onion and chopped garlic. Once the garlic turns slightly brown remove from heat and pour it on top of the noodles.
