Red Thai Curry Noodle Soup

Ingredients
1 Tbsp oil or butter
300 g mixed stir-fry vegetables( chopped or sliced)
2 – 3 Tbsp red Thai curry paste
400 ml thick coconut milk
300 g fresh noodles( boiled)
1 cup water or vegetable stock
Salt and black pepper
Fresh coriander , to garnish
Method
Heat the oil or butter in a large pan , add the red thai curry paste , fry for a minute and then add the mixed vegetables. Cook over medium heat, stirring regularly, for 4-5 minutes, until just beginning to soften.
Add 1 cup of water or vegetable stock and let it come to a boil.
Add the coconut milk in small portions and season with salt and black pepper, and stir gently until the ingredients come together to make a smooth sauce. Simmer for 3- 5 more minutes, or until the vegetables are cooked to your liking.
Add the boiled Noodles and garnish with coriander leaves and Serve in the soup bowls with a lime wedge ir squeeze of lime.
Note:To make the dish more soupy, you can add some extra water or vegetable stock – or, serve it as is.
To make it more spicy you can add 2 more tablespoon of the red thai curry paste
