CUCUMBER APPETIZERS|CREAM CHEESE STUFFED CUCUMBERS
Ingredients
3 medium cucumber
1/3 cup softened cream cheese
1/2 cup Hung curd
1/4 cup chopped capsicum
Seasonings of choice ( I have used taco seasonings)
Salt and pepper
Method
Cut cucumber in half lengthwise. Scoop out seeds and pulp, leaving a 1/4-in. shell. Place seeds and pulp in a bowl. Sprinkle with salt; drain for 30 minutes.
Meanwhile, combine the cream cheese, hung curd, capsicum , seasonings, salt and pepper, ; mix well.
Stir in 2-3 tablespoons drained pulp. Spoon into cucumber shells; sprinkle with seasonings. Refrigerate until serving.
