Litchi Coconut Juice (Lychee Coconut Juice)

Come summers, come lychee. Just like any other seasonal summer fruit in India, we also wait for the arrival of juicy lychees. The fruit is pulpy , sweet and refreshing hence, this cooling Litchi Juice is a perfect combination and a sure shot winner collaboration to beat the Indian summer heat.I have not used sugar but to enhance the sweetness, you can add  depending on how sweet the lychees are. 


Ingredients 
9 to 10 litchis
Juice from 1 coconut
Sugar ( optional)

Method 
1.Remove the leathery skin of the lychee fruit.
Remove the fleshy pulp  and discard the seeds.

2.In a blender, put all the lychee fruit pulp and make a smooth and fine puree by adding a  few tablespoons of water while blending.

3. Now add the coconut water and blend till well combined.

4.While preparing the juice, you can add the ice cubes .

5.You can also refrigerate this drink before serving.Pour litchi juice in glasses topped with some ice cubes if you like and serve Lychee Juice immediately.
