CHEMBA PUTTU(RED RICE PUTTU) RECIPE| HEALTHY PUTTU RECIPE
Puttu is a traditional and most popular cylindrical steamed cake from Kerala. It is made using 'puttu flour' which is made by soaking red rice or white rice.
Traditional Puttu is white in colour and is made by mixing slightly wet rice flour with grated coconut and sugar but the chemba puttu is made from red rice and is far healthier, my mother combines it with ragi and oat flour so as to increase the fibre and nutrient count .Its steamed with lots of fresh grated coconuts and served with Kadala curry, but at my home it's eaten with sugar and Banana.
So lets get into the recipe
Ingredients
Chemba Puttu Powder - 2/3 rd cup
Ragi Powder -1/2 cup
Oat Flour -1/4th cup
Salt - to taste
Water- 1/4 th cup or as required
Grated coconut - 1 cup
METHOD
STEP 1
Take a large bowl and add the chemba puttu powder, ragi and oat powder, salt , 1 tbsp grated coconut and salt and mix it well
STEP 2
Add ¼ cup water slowly and crumble the flour.Add water in batches and mix well with your fingertips.
Flour need to hold shape when pressed between the fist and need to break on further pressing. Mix well until the flour is very slightly wet and resembles a dry crumb. The flour should be crumbly and moist. There should be no lumps.
STEP 3
Meanwhile pour water in the puttu steamer and bring it to a boil.
STEP 4
Now into the cylindrical tube or the puttu vessel we will layer the puttu. Take a puttu steamer and layer with 2 tbsp of freshly grated coconut.Followed by 3 tbsp of puttu flour. Again layer with 2 tbsp of coconut,3 tbsp of puttu flour. Add 2 tbsp coconut and level it up then top it with little grated coconut and close the lid of the puttu tube or vessel.
Note :the pattern or the number of tablespoons will vary based on the size of the puttu vessel.
STEP5
Once the water start boiling in the pot, place the putttu vessel on the steamer and steam it for about 10 minutes.
STEP 6
After 10 minutes , make sure to observe that steam is coming out of the puttu vessel suggesting it is done switch off, remove the cylindrical tube/puttu kutty from the pot, open it and gently push the puttu out.
Note Carefully open it and push the puttu using a wooden ladle from the back.
Serve hot with kadala curry a traditional side dish for puttu or just mash with some Banana and sugar and enjoy the healthy wholesome breakfast.
