Zuchinni Crust Pizza



This zucchini crust pizza is like no other you’ve had before and if there’s a vegetable that can go with the flavors of pizza, its Zucchini. The crust is thin and delicious and can hold up a few toppings too. It’s loaded with cheese and herbs so it’s got a tasty kick to it that you won’t get from regular pizza dough.I have tried the version using flax egg but that is not something I enjoyed or would try again. The pizza crust requires work as it starts from grating to squeezing but the ultimate result is worth it. 
Let's face it Zuchinni cannot replace or taste like bread but for a healthier option you have to give up something. The pizza can be topped with basically anything and that's left to your choice but just a note don't overload it especially with any watery sauce or too much of veggies. 
Keep it simple with pizza sauce, cheese and some veggies or non-veg.Its a beautiful dish that is worth the effort. 

So let's jump into the ingredients - 




Makes 1 large pizza
Ingredients 
2-3 Zuchinni Grated 
1/3 cup almond flour*
1/2 cup low-fat shredded mozzarella cheese
2 Tbsp flax seed powder 
1 large egg
1 tablespoon Italian seasoning
Toppings 
Pizza sauce
Shredded mozzarella cheese
Favorite toppings(Paneer/salami/veggies)
Herbs and seasonings

*Internet suggests some substitutes like all purpose flour or breadcrumbs for the almond flour. I haven't tried hence cannot tell about its taste and texture. 

Method 
Step 1
Pre-heat oven to 180C. Line a baking sheet with parchment paper and spray paper with cooking oil and set aside.

Step 2
Place grated zucchini on a  clean cheese cloth and squeeze out all the excess water.

Step 3
In a medium bowl, combine the shredded zucchini, flour, egg,flax, cheese and Italian spices. Combine mixture with a spoon until fully incorporated then transfer mixture on to greased parchment paper. Press the dough into the desired shape and thickness (we like 1/4'' thickness) on the greased parchment paper.
Step 4
Bake for about 17 to 20 minutes until the crust looks set (lower grill)and there are brown spots on the top. (The time will depend on the thickness of the zucchini pizza crust.) and broil for 5 minutes. 
Carefully remove the crust and let the crust rest for 10 minutes at room temperature, then top with sauce, cheese and toppings. Return to oven and bake or broil for another 5-7 minutes or until the cheese is melted and bubbly.

(optional step-After the first bake, I let the crust cool and then remove the parchment paper gently by putting it upside down. I then place the crust back onto the tray and top it with my pizza toppings) 
Serve hot
