Carrot Crust Pizza |Vegetable and Gluten- Free Pizza

Do you suffer from dieter’s remorse ๐Ÿ˜•every time you eat a piece of pizza๐Ÿ•๐Ÿ•?
 You can eliminate those feelings of guilt  by ditching flour-based crusts and using a vegetable base instead.
It's not only healthier but quicker  to make. The Internet is full of vegetable based crust ranging from most popular cauliflower pizza crust to a delicious-tasting zuchinni base pizza crust.  I have tried the version using flax egg but that is not something I enjoyed or would try again.
 The pizza crust requires a lot of work as it starts from grating to squeezing but the ultimate result is worth it. Let's face it carrot cannot replace or taste like bread but for a healthier option you have to give up something. The pizza can be topped with basically anything  and that's left to your choice but just a note don't overload it especially with any watery sauce or too much of veggies. 
Keep it simple with pizza sauce, cheese and some veggies or non-veg.
Its a beautiful dish that is worth the effort.

Serves 3
Ingredients 
4 medium carrots, peeled and grated 
1 egg
1/4 cup mozzarella cheese
1—2 tbsp Ground Flax 
1/3 cup almond flour*
Herbs and seasonings 
1/2 tsp salt

Toppings
Pizza sauce 
Mozarella cheese 
Herbs 
Veggies
Or 
Salami/ sausage for a non-veg option

*Internet suggests some substitutes like all purpose flour or breadcrumbs for the almond flour but I haven't tried. 

Method 
Step 1
Preheat oven to 180 C.
Place greased  parchment paper on the baking tray and keep aside.

Step 2
Grate the carrots ๐Ÿฅ•๐Ÿฅ•๐Ÿฅ•
Step 3
Take the grated carrots and using a clean muslin cloth squeeze out the liquid .Place  the carrots in  a medium size bowl.

Step 4 
Make the crust by adding the grated carrots, mozarella cheese, almond flour, ground flax, herbs, salt and egg.Mix well
Step5
Spread the mixture onto the greased baking tray and roll mixture out into a 1/4 inch thickness(approx).
Step 6
Bake at 170 C for 15- 17 minutes(lower grill) and broil for 5 min, until edges are crispy, and centre is firm. 
Step 7
Remove from oven and top with your favourite pizza toppings. 

(optional step-After the first bake, I let the crust cool and then remove the parchment paper gently by putting it upside down. I then  place the crust back onto the tray and top it with my pizza toppings) 
Step 8
Place back in oven for another 7 to 8 minutes(upper grill) or broil for 5 minutes for the cheese to melt.
