Cauliflower Pizza
The cauliflower pizza crust recipe is a healthy keto, lowcarb, grain free, gluten-free pizza crust made using few simple ingredients. I have made various versions found on the Internet and frankly was waiting for the perfect blend of ingredients. So the addition of almond flour in the base does miracles as gives an extra binding to the crust.Previously I always ended up breaking my crust even before putting the toppings.
I have tried the version using flax egg but that is not something I enjoyed or would try again.
The pizza crust requires a lot of hardwork as it starts from processing to squeezing but the ultimate result is worth it.
Let's face it cauliflower cannot replace or taste like bread but for a healthier option you have to give up something. The pizza can be topped with basically anything and that's left to your choice but just a note don't overload it especially with any watery sauce or too much of veggies.
Keep it simple with pizza sauce, cheese and some veggies or non-veg.Its a beautiful dish that is worth the effort and you won't miss the carbs.

So let's jump into the ingredients-
Ingredients
2 cups cauliflower rice about the head of a medium size cauliflower1 large Beaten egg
1/4 cup Almond flour or 3 Tbsp ground flax*
1/2 to 1 cup Grated Mozzarella
Herbs* (Oregano, thyme, dried garlic powder, dried onion powder)
Salt
Topping
Pizza sauce*
Mozarella cheese
Veggies(onion/Capsicum)
Herbs
Ham/sausage(optional)
Note-
*most recipes will not call for almond flour or flax but it is basically to bind the base better.
*the choice of herbs is completely upto your taste and preferences
* I use homemade low carb tomato sauce
*Drain your cauliflower as much as possible
*Don't overload the pizza and avoid water loaded toppings
Method
Step 1
Preheat oven to 200°C (400°F).
Prepare a baking sheet covered with parchment paper. Spray some oil on top to prevent the crust from sticking. Set aside.
Step 2
Place half of the cauliflower florets into a food processor and blend until all the florets are pulsed into fine cauliflower rice. Based on the size of the processor you will have to do it in batches.
Transfer the cauliflower rice into a microwave-safe bowl and microwave for 5-6 minutes. Let is slightly cool down for 2 to 3 minutes and then transfer the hot cauliflower rice onto a clean towel or linen free cloth and squeeze as firm as you can to release all the water. This is the most important part as the remaining cauliflower should be a dry ball.
Note-It is very hot so avoid burning your hands.
Step 4
Transfer the cauliflower ball into a bowl, add herbs,almond flour/ground flax, salt, egg, and cheese. Combine with spatula.
Press the cauliflower crust onto the prepared baking sheet. Press with your hands to form a round pizza. It should not be very thick.
Step 6
Bake for 17 - 20 minutes at 180 C but check at 15 minutes or until the borders are crispy.
Broil for an additional 5 minutes.
Spread your pizza sauce and toppings of veggies/meat, herbs and cheese.
