Ridge Gourd Chutney
This is a recipe from the cook books of my Minu Didi who hails from Assam and was kind enough to share it with me. Having been brought up in a village she recalls that everything they grew or bought was used( idea of real sustainability) and nothing went into the bins. Even the vegetable peels were utilized either as manure or chutneys.
It was during my stay at home during the covid period that she made this chutney for the first time for us and she asked us to guess the vegetable that was used for making it. We failed miserably at guessing and when she revealed that is was made using ridge gourd peels, I knew immediately, that I had to share it with you all. So heres the recipe for the vibrant and delicious ridge gourd chutney.

Ingredients
250 gms of Ridge Gourd Skin or peel
3 tbsp channa dal
13 garlic cloves
A small piece of ginger
3 pieces of chillie
2.5 tbsp of roasted peanuts
3 tbsp oil
4 to 5 tbsp water
Salt to taste
Method
Heat the oil in a pan. Add the channa dal and roast for a minute. Add peanuts, chilli, ginger and garlic. Roast it for 2-3 minutes on medium heat.
Step 2
Add the skins or peels by breaking it into two or crushing it. Add the salt.
Mix and close the lid. Let it cook for 10 to 12 minutes till the skins soften.
Step 3
Remove the mixture from the flame. Let it cool.
Now,add it to a blender along with 4 to 5 tbsp of water.Blend it well to a coarse chutney consistency.
Enjoy with rice, cauliflower rice ,roti or bread
