Keto Curd Rice | Cauliflower Curd Rice

Cauliflower Curd Rice is a comforting and healthy South Indian dish made with cauliflower rice, greek yogurt and tempered with dried red chilli and mustard and other Indian spices. This dish and recipe fits the  low carb diet perfectly and goes with the summer vibes.
 
So let's jump into the ingredients :
                    
                           Curd Rice 

Serving 2
Ingredients
300g Cauliflower (riced)
150g Greek Yogurt  (can add more )
5g Ginger(crushed)
1 to 2 nos Green Chilli(crush it with the ginger) 
Curry Leaves (handful)
1 Tsp Mustard seeds
1 Tbsp Oil 
Salt and Asafoetida to taste 
Roasted Peanuts  1/4 th cup

Indian Tempering 
Oil/Ghee – 2 Tbsp
Mustard Seeds – 1/2 Tsp
Coriander Seeds -1/2 Tsp
Dry red chilli - 2 to 3 

Method-
Step 1 
In  a pan add a tablespoon oil. Add the mustard seeds, curry leaves ,and ginger(+chilli) and saute well.
Add the cauliflower rice,salt and asafoetida. Cook for 2 to 3 minutes and keep aside. 

Step 2 
Transfer the cauliflower rice into a bowl & add in the Greek yogurt.
Add in the roasted peanuts and mix well. Add water in small quantities and mix until it reaches  the right Curd rice consistency.
Note 
1.If the consistency you prefer is thick add more Greek Yogurt.
2. If the consistency you prefer is watery add more water. 

Step 3
For Indian tempering -
In a small pan add oil,mustard seed,coriander seed and the dry red chillies. Lets the seeds crackle and pour it on the curd rice mixture. Mix well and taste. Additional salt will be  required. 
I like it cold hence I refrigerate it for atleast 2 hours before serving but that again is left to your preference. 

Enjoy with flax seed chutney/bitter gourd chutney or any spicy chutney.
