Cauliflower Peanut Rice

 Peanut Cauliflower Rice 

Peanut rice is a tasty South Indian rice variety made with roasted peanut powder, lentils and spices. I substituted the rice with cauliflower rice and it was definitely aromatic and wholesome but when compared to cauliflower curd rice this is spiced up with masalas. This dish can be enjoyed as a delicious lunch dish with some chutney or vegetable raita/ salad. 

So lets jump into the ingredients: 

Servings 2 to 3

FOR PEANUT MASALA :

1/2 cup peanuts Roasted 
1 Tsp urad dal 
1 Tsp coriander seeds 
1 Tsp cumin seeds
1 tbsp chana dal 
2 Tbsp grated coconut
6 to 7 cloves of garlic 
4 to 5 Dry red chilli 
Handful of curry leaves
Salt and asafoetida 

OTHER INGREDIENTS-

1 Tbsp oil
2 to 2.5 cups of cauliflower rice 
1 Tsp cumin seeds 
1 Tsp mustard seeds
Salt
FOR TEMPERING 
1 tbsp oil 
1 tsp mustard seeds
Handful of peanuts roasted 
2 Dry red chilli( broken into half) 
Asafoetida

Method 

Steps
  • Firstly dry roast all the ingredients of the peanut masala in low flame.Cool the spices completely, and blend to fine powder without adding any water. Keep aside.
  • In a large pan heat  1tbsp oil and splutter 1 tsp mustard and cumin seeds.
  • Add the peanut masala and mix 
  •  Add 2 cups of cauliflower rice 
  • Mix and cook well. Taste and add salt.
  • Add all the tempering ingredients in a pan . Lets the seeds crackle. Pour on the cauliflower rice 
  • Serve peanut rice with curd or chutney 
  • NOTES - Due to the addition of pulses it does not adhere to  keto.
