Cauliflower Tomato Rice
Tomato rice is simply rice cooked with lots of tomatoes and lots of spices and is eaten literally in every corner of the country. Paired with some pickle and yogurt, is the best way to enjoy the rice. So is it different from the traditional tomato rice? oh yes, we're not using rice but cauliflower rice.
Ingredients
Cauliflower Rice – 2 cups
Tomatoes(finely chopped) -2 small
Onion(finely chopped) – 1 nos
Green Chillies – 2 sliced
Turmeric powder – 1/2 tsp
Red Chili powder – 1/4 tsp *
Sambar powder as per taste(optional)
Garlic Cloves(finely chopped) – 6-7
Curry Leaves – a few
Mustard seeds - 1tsp+ 1tsp
Fennel seeds- 1tsp+ 1tsp
Salt to Taste
Oil- 2 tbsp
Indian Tempering
Oil – 2 Tbsp
Mustard Seeds – 1/2 tsp
Coriander Seeds -1/2 tsp
Peanuts a handful
Asafoetida
Dry red chilli - 2
Fennel Seeds (Saunf) – 1/2 tsp
Method
Step 1
In a pan add a tbsp of oil with garlic, mustard seeds and fennel seeds. Add the cauliflower rice.Pan-fry the cauliflower rice for a few minutes.Set aside.
Step 2
Heat oil in pan. Add mustard seeds, wait till they pop. Add fennel seeds and curry leaves, and fry for a few seconds. Add onions and green chillies. Fry until onions turn brown. Add turmeric powder,chilli powder, sambar powder. Add the chopped tomatoes and sprinkle the salt. Add little water and let the water reduce.
Step 3
Now add the cauliflower rice ,mix well and tranfer to your serving bowl.
Make the tempering and pour on the rice.Serve hot with raita or chutney.

NOTES
- Decide the level of chili powder based on the spiciness of your powder. However, cauliflower rice cannot absorb as much chili hotness as its white rice counterpart. So proceed with caution.
