Vegetable Curry Millet Bowl
Today, I am excited to share a deliciously creamy white curry made with colourful vegetables and enriched with the goodness of milk and oat flour. This dish is perfectly paired with kodo millet, a nutritious grain that adds a delightful texture and flavor. Not only is this recipe a feast for the senses, but it’s also a wholesome option for those seeking a healthy meal.
Ingredients
Ghee 2 tbsp
Garlic 8 to 10 minced or chopped
Green chillies 2 slit into 2
Kodo Millet- 1 cup
Onion- 1 medium chopped
Capsicum - 1 medium chopped
Carrot + beans- 1 cup chopped
Broccoli - 1 cup chopped
Paneer 50 to 75 Grams
( I've used 6 to 7 pieces of prawns as well)
Oats Flour- 2 tbsp
Skimmed Milk - 1 Cup
Water - 1 Cup+ 1 Cup
Chilli Flakes ,Black Pepper ,Oregano
Salt to taste
Method
1.Wash , soak and drain the kodo millets.Add 2 cups of water,a pinch of salt and 1 tsp of ghee to the pressure cooker and after it comes to a boil add the drained millet, stir to combine and close the lid.
Let it cook on low for around 12 to 13 minutes. When the millet is done let it naturally release pressure for 10 minutes, then manually release any remaining pressure by moving the valve to vent.Stir and fluff with a fork.
2.Heat some ghee in a kadhai. Add garlic and
green chilli. Saute for 1 min. Add the onions and let the onion soften.
3.Add all the veggies and cook for 2 to 3 minutes.
4. Now add oat flour and mix it well.
Add 1 cup of water and let the vegetable cook and soften.
Add the protein of choice as this stage.
5.Once the vegetables are tender add the milk and 1 more cup of water followed by salt and seasonings.
Let the Sauce thicken. Check for salt,garnish with coriander leaves( optional) and enjoy with a bowl full of millet rice.
