Red Rice Pulao Recipe (Indian Style)| Tomato Pulao
Ingredients
Ghee - 2tbsp
Cinnamon
Bay leaf 1
Fennel seeds 1 tbsp
Shallots - 1/2 cup
Green chillies - 2 slices
Tomatoes - 3 (medium) roughly chopped
Handful of chopped mint leaves
Handful of chopped coriander leaves
Turmeric powder - 1/2 tsp
Red chilli powder -1 tbsp
Coriander powder - 1/2 tbsp
Cumin powder- 1/ 2 tbsp
Salt as per taste
Soaked red rice - 1 cup( Wash and soak it for atleast 3 to 4 hours)
Water -2 cup
Method
1.In the pressure cooker, heat ghee and ad cinnamon, bay leaf and fennel seeds. After 1 to 2 minutes add the shallots and green chilli . Cook for a few minutes and add the chopped tomatoes and the masalas and cook until the smell is amazing and tomatoes are mushy. Add the coriander and mint leaves.
2.Add drained red rice, water and salt, and stir it up good to combine it all and bring to a boil. Put the lid and and cook on low.
3.The amount of time needed to cook the rice will depend on what rice you use.
As its red rice it took 30 minutes on low.
Garnish with coriander leaves and enjoy
