Mango Salsa - sweet & spicy

This mango salsa is an awesome combination of mango sweetness and spicy chillies. The tropical salsa goes well with nachos, sea food and seed crackers. This mango salsa recipe is quick, easy, fresh and delicious to make and can change up the salsa game. 

Ingredients 
2 large mangoes diced 
1/2 onion diced/finely chopped
3/4 red bell pepper, diced
1-2 green Chillies chopped(can increase  the number of Chillies based on the preferred spice level) 
1/4 cup cilantro/coriander finely chopped 
1 tablespoon olive oil*
1-2 tablespoons fresh lime juice
1-2 teaspoon honey
Salt to Taste 
*incase you like the taste of coconut oil that is a good addition to the salsa in place of olive oil. 

Method 
In a bowl, whisk together olive oil, lime juice, honey, and a pinch of salt. 
Add mangos, red bell pepper, onion, chillies and cilantro, tossing to combine. Season to taste with additional honey (depending on the sweetness of the mangoes), and salt if needed. Can slightly mash the salsa if paired with crackers or nachos. 
Cover and refrigerate for 30 minutes before serving.Garnish with some fresh cilantro and enjoy cold.
