Cabbage Fritters
If you're looking for fun new recipes with cabbage then try these Cabbage Fritters. Fritters are considered to have eggs and milk but that's really a misconception as just simple flours and water can do the same trick. Depending on where and what culture you come from you may call it savoury pancake, fritter or as the original recipe a cabbage Rosti. A plate of veggies are definitely lighter, healthier and gentler on your gut. This recipe is fun to make easy but slightly technical with respect to water and consistency. The recipe remains the same as the original but there's a tweak of oats flour and flax seed powder in place of cornstarch.
Half cabbage or 1.5 cups of cabbage finely chopped
1 medium size onion finely chopped
1 cup coriander finely chopped
1 to 2 green Chillies finely chopped
1/2-1 tablespoon finely chopped garlic
Salt, chilli powder and black pepper to taste
3 tablespoons oats flour
3 tablespoon gram flour
1 tablespoon of ground flax seed
1/4 cup water
Method
1.Add all the chopped cabbage, coriander, onion, garlic,green chili, salt, chili powder and pepper. Mix all the ingredients together. Taste to see if salt is adequate.
2.Add the flours(oats flour , gram flour and ground flax seed) and mix together. Add about a quarter cup water and mix into the ingredients.
Keep aside for 5 to 7 min.(important step)
You don't want the mixture to be too moist or thin batter like. It should be just enough to bind.
Spoon in the batter and slightly spread it on the pan( to shape the fritter one can use a mould or after spreading the mixture just clean down the edges with a spoon to make it a proper circle). Brush some oil for the sides, cover and let it cook. Allow them to get golden brown on each side - about 3 to 4 minutes on each side.
Serve the fritter hot with some mint chutney/ hot and spicy sauce or as in the original recipe chili garlic dip.
