Zucchini Brownies

The Zucchini brownie recipe by Ela Vegan  is definitely one of the best vegan brownie recipes I have tried as  the end result is rich, fugdy and goey. Above all it is a one blender quick recipe and due to the blending technique the addition of a vegetable like Zucchini is unknown honestly. This post will give you certain tricks and tips for the brownie recipe. 

Original Recipe Vegan Zuchinni Brownies

Ingredients as per Original Recipe 
Dry ingredients 
150 g granulated sweetener *
135 g rolled oats, ground into flour 
90 g dairy-free chocolate chips*
50 g cocoa powder unsweetened 
1 tsp baking powder
1/4 tsp baking soda
1/3 tsp salt
1 tsp instant coffee powder *

Wet ingredients
 200 g shredded zucchini tightly packed 
120 g nut butter of choice *
60 ml plant-based milk*
1 tsp vanilla extract

Tips-Notes on the ingredients 
*I used powdered jaggery as the granulated sweetener but one can use coconut sugar to low-carb granulated sweeteners
*I have made the brownie with chocolate chips( dark and milk) and dark chocolate bar. My family prefers the brownie with the dark chocolate bar( more chocolatey I guess) and the use of chocolate varies between 100 g to 125 g. 
*coffee is  optional and I preferred the brownies without it but again it depends on the taste and preference of the individual. 
* I used natural peanut butter 
* the plant based milk I used is coconut milk. 
The original recipe says 60 ml but I needed an additional 1-2 tablespoon to smoothen the process in the blender. 

Method - original recipe method 
1. Line a baking tray with  parchment paper and grease it with oil and preheat oven to 180C. 

2. The original recipe says to process the dry ingredients and then the wet ingredients. The tip here is incase you have a food processor it works but if a home mixer it definitely doesn't work. 
So process the Zucchini , milk, vanilla essence followed by peanut butter.
Now add the dry ingredients in batches with baking soda and baking powder being added in the last batch. A couple more tablespoon of milk may be required to smoothen the process. 

3. Blend till you get a smooth batter and add the chocolate chips or chopped dark chocolate and stir with a spoon. 

4.Pour the batter into the baking tray and add more chocolate chips/ or chopped dark chocolate on top. 

5. Bake in the oven for about 35-40 minutes. The baking time varies based on the heat of the oven and size of the baking tray( important point). 

Check first at 30 min by inserting a toothpick and if it comes out clean the brownies are done. Let the brownies cool completely (another important step ).

I store the brownies in the refrigerator and microwave for 20 - 40 sec before serving. 
Serve it hot.
