Lemon Quinoa Recipe | South Indian Lemon Rice
1 to 2 tbsp cooking oil or ghee
1/2 tbsp urad dal( optional)
1/2 tsp mustard seeds
7-8 curry leaves
2 green chillies chopped
Finely chopped ginger
Turmeric powder
Salt as per taste
A pinch of Hing or asafetida
1-2 tbsp water
1.5 cups cooked quinoa
1/2 tbsp lemon juice( can additionally add more)
Roasted peanuts and cashews
Method
To a pan add oil. Once the oil is hot, add the mustard seeds and let them pop, and then add urad dal. Cook for 30 seconds or so until the dal starts changing color.
Add the green chili, ginger and saute for few seconds until ginger starts changing color.
Add the curry leaves and turmeric powder stir and then add the cooked quinoa followed by hing , salt and lemon juice. Mix the seasoning well with the quinoa.
You can taste test and add more lemon juice if needed at this point.
Add roasted peanuts and mix. Serve lemon quinoa with pickle
