Eggless- Gluten Free Christmas Cake|Ragi Plum cake | Healthy Plum Cake



This Plum Cake recipe is an easy-to-make tasty fruit cake and  bonus – this delicious Christmas favorite is eggless and gluten free, making it a wholesome treat the whole family can enjoy.


Ingredients 
1 cup jaggery, powdered
½ cup curd
¼ cup oil
1½ cup milk
2 cup ragi flour
2 tbsp cocoa powder
1 tsp vanilla extract
¼ tsp baking soda
1 tsp baking powder
1/2 cup +1/4 cup of soaked Christmas fruits
pinch salt


Method 
1.Firstly, in a large bowl take jaggery, curd, oil,vanilla extract and milk.Whisk and mix well making sure jaggery melts completely.

2.Sift and  add the dry ingredients:ragi flour, cocoa powder, baking powder, baking soda and salt.Mix well making sure everything is well combined and smooth consistency.

3. Use 1 to 2 tablespoon of ragi flour , coat the soaked fruits and add it into the batter and mix well. Transfer the cake batter to a cake mold.Also, tap twice to level up uniformly and remove any air bubbles if present.


4. Preheat  and bake at 180-degree celsius for 35- 45 minutes.Insert a toothpick and check if the  fruit cake cake has baked completely.
Cool the cake and then unmold the ragi fruit cake decorate with some sprinklers and frosting , cut  into pieces and enjoy.
