3 INGREDIENT BLUEBERRY OAT COOKIES (NO FLOUR, EGGS, ADDED SUGAR)

These blueberry cookies are soft, and chewy, and need just 3 ingredients to make! They have no flour or eggs in them and bake in under 20 minutes.




Ingredients 
1/2 cup  halved fresh blueberries
1/2 cup mashed very ripe bananas
1 cup quick oats
Honey or maple syrup ( optional)
Nuts and chocolate chips (optional)

Method 
1.Preheat airfryer to 180°C. 

2.Add halved blueberries and mashed bananas to a large mixing bowl. Stir until they are evenly mixed.Add in  oats. Stir until the oats are evenly mixed and fully coated in banana blueberry mixture.


3.Form balls of dough and press each ball into a cookie shape. Place them onto the airfyer basket 

4.Bake the blueberry breakfast cookies for 10 minutes, check and place it for another  3 to 5 minutes. Flip it and airfry for another 2 to 3 minutes or until golden on the edges  or until the blueberries are softened (and just starting to release their juices) and the cookies are fully cooked. 

5.Remove cookies from the oven and allow cooling on the tray for 10 minutes, before transferring to a wire rack to cool completely. 

The cookies are only lightly sweetened. If you want them sweeter, you can add chocolate chips, dried fruit or other mix-ins. You can also stir in 1-2 tbsp of maple syrup or honey to the cookie mixture (or however much needed to taste).
