Kothu Parotta|Kerala Style Kothu Parotta
Kothu Parotta is a popular South Indian street food that is absolutely scrumptious and easy to make. It is made by tearing Parotta into small pieces and then sauteing with onions, eggs or meat gravies and masala powders.
Ingredients
3 cooked Parotta
2 Medium Onions Finely Chopped
1 Medium Tomatoes Finely Chopped
1 teaspoon Ginger Garlic Paste or chopped Ginger and garlic
3 dried red chillies
2 Green Chillies chopped
1 tablespoon Oil
½ teaspoon Mustard Seeds
½ teaspoon Fennel Seeds
1 tablespoon Kashmiri Red Chilli Powder
1 teaspoon Coriander Powder
¼ teaspoon Black Pepper Powder
½ teaspoon Garam Masala Powder
¼ teaspoon Turmeric Powder
Salt as needed
Few Fresh Curry Leaves
Few Fresh Coriander Leaves Finely Chopped
Any cooked protein of choice ( optional)
Method
1.In a pan heat 1 tablespoon oil. Add mustard seeds and fennel seeds. As they splutter, add fresh curry leaves, red dry chillies, ginger garlic and green chillies.
2.Next add 2 medium onions finely chopped. Fry until translucent.Now add the tomatoes and cook them until mushy.
3.Add all the spice powders and cook all the spice powders for 3-4 mins on low flame. Add 3 to 4 of tablespoon of water and let it simmer for 3 to 4 minutes.
4.Meanwhile, cut it or chop 3 parottas using a tumbler with sharp edges or cut using a scissor into small pieces.
5.Now add salt required for the masala. Mix well.Add the chopped parotta pieces into the pan.Mix well quickly making sure each piece is coated in the masala.
I've also added some shredded chicken tikka at this point of time.
