Chakka Ada |Steamed Jackfruit Rice Cake
Chakka or jackfruit ada(rice cake), is a deliciously rich south Indian traditional 4 pm snack made with ripe jack fruit and jaggery steamed in banana leaves. The sweetness of jaggery combined together with jackfruit alongwith the aroma of cardamom🤤🤤 its just perfect!!

Ingredients
Jackfruit ripen - 2 cups (chopped)
Rice flour - 2 cups
Jaggery - 1 cup
Cardamom powder or 5 cardamom pods seeded - 1/4 tsp
Grated coconut - 1/2 to 1 cup
Water - 1/2 cup
Banana Leaf
Ghee
Method
Step 1
Melt Jaggery in 1/2 cup water, filter impurities and boil till it thickens.
Step 2
In a saucepan cook the jackfruit🍈🍈 with melted jaggery. Allow it to cool down and blend it into a smooth paste.
Step 3
In a mixing bowl take the rice flour, grated coconut, cardamom powder, and add the jackfruit paste to it and mix well.Add water if the dough is too thick.
Step 4
Cut banana leaf into small squares, and slightly wilt them in open flame, that way it will be easy to use.Then brush the banana leaves with ghee and place small round dough in the center and spread it into in ½ inch circle.
Step 5
Fold it into two then fold again to form a wrap.Place it in a steamer and cook for 15-20minutes or until banana leafs color changes.
Once it cools down remove the wrapper and enjoy while sipping a cup of ☕️hot tea.
