Almond ladoo|Badam Ladoo



With festive season around the corner I am sharing an  easy, effortless mithai  recipe that balances both health and taste. The mithai can be customized to suit a vegan diet or even gluten-free diet. The almond ladoos  will satisfy the instant sweet cravings and the use of almond flour makes the mithai rich and decadent and   it requires only 15 minutes and  6 ingredients!

So lets jump into the ingredients 
 
Ingredients 
11-12 ladoos

Saffron milk - 1tbsp warm milk with a pinch of saffron strand
Ghee or coconut oil - 2tbsp
Almond flour- 2 cups
Stevia sweetner as required or 1/2 cup of jaggery powder
Cardamom powder 1/2 tsp 
1 tablespoon milk (non-dairy/regular milk)

For the chocolate centre , one needs to prep some chocolate but this is  optional. You can  skip the chocolate centre completely.

Chocolate centre
1 ¼ cups chocolate buttons( milk/dark)
¼ cup heavy cream
Vanilla extract



Method

1.Add 1 tbsp ghee into a pan  and add almond flour, stirring continuously and cook for around 3 to 4 minutes until it's fragrant.  Remove pan from heat.

2.Transfer the roasted almond flour ,the sweetner , caradamom powder , saffron milk  and 1tbsp ghee into a blender and  blend until everything is combined. 

3.Transfer  powdered mixture into a bowl followed by 1tbsp milk. Now mix everything very well with your hands.Grease your hands with some ghee and roll the mixture to give it a round  or ball shape .Make all ladoos similarly and garnish with some saffron strands.

4. If your adding the chocolate centre 

Place chocolate buttons and cream in a bowl. Melt the chocolate using the double boiler method. When the chocolate starts to melt, stir to combine and remove from flame. Stir in vanilla extract. Let it cool to room temperature. Transfer to refrigerator and cool again for 1-2 hours, or until it sets.

Now make a dip in the center of each ball or ladoo and  place a small amount of chocolate in the middle, and roll again to complete the round.
