Healthy Millet Noodles|No maida vegetable noodle
This veg noodles recipe is easy and is made with all of your favorite crunchy vegetables, delicious sauces and is perfect for a quick weeknight meal!
The vegetable based noodle is made with millet noodles making it a healthy dinner and ideal for comfort food.

Ingredients
125 grams noodles( Foxtail millet noodles)
3 tbsp oil
3 clove garlic (finely chopped)
1 onion (chopped)
½ carrot (chopped)
1 green capsicum (chopped)
4-5 beans (chopped)
3-4 Baby corn (chopped)
5 tbsp cabbage ( finely shredded)
Sauces
2 tbsp tomato sauce
1 tbsp soy sauce
1 tbsp red chilli sauce
Seasonings
Pepper powder
salt
Seasoning packet
Garnish (optional)
Spring onions
Coriander leaves
Method
1.Cook the noodles in 500 ml boiling water (approx 4 cups) for 5 minutes
Drain the hot water and rinse the noodles with cold water.
2.In a large kadai heat oil and saute garlic, and onion on high flame.Further add the remaining vegetables and stir fry on high flame for 2 minutes or until veggies are cooked yet retain their crunch.
3.Add all the sauces ( tomato, soy and chilli sauce)
4.Cook for a couple of minutes and now season with pepper powder, salt and the noodle seasoning packet.
Note - can add a couple of tablespoons of water to the vegetable mixture. Cook till the water evaporates and sauces are well-combined.
5. Add in the boiled noodles and mix gently and check the seasoning. Remove from heat.
6.Finally, garnish with spring onions or chopped coriander and enjoy the healthy veg noodle.
