Quinoa Kheer |Quinoa Payasam | 4 ingredient payasam

Quinoa has become a  popular food option for people who are on a protein-rich  gluten-free diet. It is a good source of protein, fibre and vital nutrients. Savory recipe with Quinoa are available all over the Internet but here I give you a sweet recipe using quinoa. As an Indian, sweet is an essential part and sweets with milk is unavoidable in south of India. For all festivities or occasion we would definitely make Kheer (popularly known in North Indian) and payasam(popularly know in South India)  and with festivals like Diwali and Dussehra round the corner this  healthy, refined sugar-free, gluten-free dessert is a must-try.  The quinoa payasam is rich, healthier and delicious and can be made with just 5 ingredient in less than 30 minutes.

So come let's jump into the ingredients and step by step method for making quinoa payasam.

Ingredients 
1 cup cooked quinoa
1 cup  milk
1/2 cup jaggery powder 
2-3 tbsp oat flour 
2 cardamom
Dry fruits for garnish (optional) 

Method
1.Add milk🥛 to a pan followed by crushed cardamom
🔥 Keep the gas on medium heat 
2.Add the jaggery powder and let it dissolve completely. 
Note -Before adding the quinoa remove the cardamom skin from the milk jaggery mixture
3. Now add the cooked quinoa followed by 2-3 tbsp of oat flour. 
Note - the oat flour helps in thickening of the payasam 
4. I added some crushed cashews but you can  roast 1 to 2 tbsps of cashews and raisins in 2 tsps of ghee and add it to the payasam.
As the payasam cools, quinoa absorbs the milk and thickens slightly. Thus, serve it hot and garnish with some additional dry fruits.
