Zucchini Packets

Zucchini is quite a versatile vegetable and can be molded to make zoodles, brownies and packets. 
So what are Zucchini packets? They are basically strips of zucchini stuffed with cheese and paneer and baked or air-fryed to form a packet like dish. It is an amazing starter and appetiser and should be served hot with some tangy/ spicy sauce. 
So try the cheesy soft packets and enjoy😀


Serves - 2
Ingredients
Olive Oil 
2 medium zucchinis
150-170 g Paneer 
5- 6 tbsp Pizza sauce 
2- 3 tbsp Fresh Cream 
½ cup shredded mozzarella cheese (50 g)+ 2 Tbsp for serving 
Herbs(oregano/thyme/chilli flakes) 
Salt and pepper 
Add  grated paneer, pizza sauce,cream, grated mozarella cheese, herbs, salt, and pepper. Mix until well combined. Taste and season. 
Cut off the end of each zucchini then using a vegetable peeler, peel each zucchini into wide strips.( The middle portion of the Zucchini can be kept aside to put in curries) 
Transfer the zucchini strips to a plate then layer three strips horizontally and three strips vertically to make a cross. 
Repeat process with remaining strips.Using a spoon or cookie scoop, scoop approximately 1 tablespoon of the mixture and place in the middle of each zucchini noodle cross.
Fold each side to seal the  paneer mixture 

If using oven /OTG 
Preheat oven to 180 °C. Spray the baking tray with cooking oil. 
Place the Zucchini Pockets seam side down on the prepared baking tray. Sprinkle lightly with seasoning or salt  and freshly ground pepper. Bake for about 15—20 minutes, then top with your favorite sauce and a bit of shredded Parmesan\mozarella (if you like) and enjoy!

If using Air-Fryer
Place them on a air-fryer basket and then airfry at @180 for 10 minutes. Check at 7 min.
Serve hot🔥 with your favourite sauce and bit of shredded cheese.
