Mango Tres Leches Cake |Milk cake |Mango Milk cake

Tres leches means 3 milks in Spanish and you can imagine the rich creamy taste this cake provides, after being soaked in a mixture of evaporated milk, sweetened condensed milk, and regular milk. These are also called Milk Cakes and trust me , they  are real addiction.
The  soft spongy base immersed in milk topped with cream cheese and fresh fruit. 

Now the fruit used can vary based on season as it's the mango season in India I topped and soaked the tres leches in mango flavour and topped it with fresh chopped mangoes, and it is a next-level dessert to try out for this summer!

 Calling all the mango lovers out there! This is seriously a show stopper dessert!All you need is a sweet delish mango ! My family loves any form of  cake so made it with our family fav fruit and they enjoyed every bit of it!

Ingredients
Sponge Base
3 eggs room temperature
1 egg white
1/2 cup sugar
2/3 cup flour
1/2 tsp baking powder
2 tbsp butter melted and cooled
1 tsp vanilla extract

Milk Mixture
1.5 cups whole milk
1/2 cup evaporated milk
1 cup condensed milk
1/2 cup mango puree or 1 cup chopped mango

Topping
200 g softened cream cheese 
2 tbsp softened  unsalted butter 
1 and 1/4 cup powdered sugar **
1 tsp vanilla extract 
1/4 cup chopped mango 

** can add more powdered sugar if you want it sweeter 

Method
 
Preheat your oven to 180C
1.In a bowl add the eggs and egg white. Using the hand mixer beat until the eggs start to froth. Then gradually add the sugar until the eggs have reached soft peaks and are fluffy.

2.In another bowl sift the flour and baking powder together. Add to the egg mixture in batches , gently folding to combine. Use a spatula to fold, and mix just until the flour combines. Then add the vanilla and butter and fold just till combined. Pour into your baking dish and bake for 25 minutes or till the top is golden brown.

3. While the cake is baking prepare your milk mixture. Mix the milks and mango puree  in a blender keep  aside.
4.Once the sponge comes out of the oven, let it cool and then poke small holes using a fork all over the cake. Gradually pour the milk mixture 1/4 th cup at a time all over the cake. Let the milk absorb into the sponge as it cools.
Let it refrigerate for atleast 5 to 6 hours or preferably overnight. 
5. After the cakes time in the fridge let's get to the topping . 
To start, combine the cream cheese and butter in a blender and blend together until they are fully  combined . Now add the powdered sugar and vanilla and blend again. Use the frosting immediately:
Spread or pipe it on the cake and decorate with some fresh mango pieces. 

6.Refridgerate for at least  3 to 4 hours. Cut and enjoy
