Pizza-Flavored Quinoa Fried Rice


Pizza-Flavored Quinoa  “Rice” is crowd-pleasing real-food meal that combines the flavours of pizza but with a twist.It can be whipped up in less than 10 minutes with a little prep ahead!

Ingredients
2 cups cooked quinoa
2 tablespoon butter
1  tablespoons extra-virgin olive oil
1/2 cup Pizza sauce
1/4 cup Fresh cream 
1-2 tablespoon dried oregano
1-2  tablespoon  red chilli flakes 
Salt
Black pepper 
1 cup onion cubed
1 cup bell pepper, de-seeded and  cubed
1 cup babycorn chopped 
Mozarella cheese 
2 tablespoons black olives, pitted and chopped (optional for garnish)

Method 

*Heat butter and extra-virgin olive oil in a large skillet over medium-high heat.

* Once the oil is hot,  add the bell peppers, onion, and baby corn. 

*Cook until the vegetables are starting to soften, about 3 minutes, stirring constantly.

*Add oregano, red chilli flakes, salt and pepper and cook for 2 to 3 minutes. 

*Add the pizza sauce and cream, mix well.


*Now add the cooked quinoa rice and cook for a minute until the rice is well combined with the sauce base.

 

Sprinkle the black olives and cheese on top and serve.
