Vegetable Poha Recipe
Poha' is one of the easiest and light yet filling breakfast which is said to have originated in western and northern India. 'Poha' is a good source of carbohydrates and is rich in iron and low on gluten and the combination of the chewy 'poha' , peanuts, citrus lime, sev bhujia and onions is an awesome flavor to relish.
Have this dish with a piece of jalebi and awaken all your senses and tastebuds and you cannot but help to call it breakfast for the soul! Serve and enjoy hot🙂
150 grams poha medium thick
1 tablespoon Oil
1 teaspoon mustard seeds
2 green chili finely chopped
1 sprig curry leaves
1 onion chopped
3 Tablespoon Carrots finely chopped
3 Tablespoon finely chopped Bell pepper or beans
2 Tablespoon peas
¼ teaspoon turmeric powder
½ teaspoon red chili powder
Chaat Masala and Squeeze of lemon
Salt to taste
Garnish
Coriander Leaves
Onions
Peanuts
Sev Bhujia
Pomegranate
Instructions
1.Take the poha in a bowl, add ½ cup of water mix it well and rinse the poha with cold water drain out excess water immediately and keep it aside.
2.Heat oil in a pan and add in the mustard seeds. When the mustard seeds start popping add green chilli and the curry leaves, onions and saute until softened.
3.Once the onions have softened, add the remaining vegetables, sprinkle some salt and water and allow it to cook for few minutes till soft. Keep stirring that occasionally.
4.Now add salt to taste and turmeric powder as well as red chili powder.Mix well and cook for 2-3
6.Mix everything together and then add in the washed drained poha.
7.Give the poha a gentle stir until all the ingredients come together.
9.Check the salt and seasonings and adjust to suit your taste and serve
Mix everything well and switch off the heat.
Serve it hot and top with generous sprinkle of bhujia sev,roasted peanuts, onions, Chaat masala and pomegranate.
