Oats Phirni with Jaggery
The basic difference between the original phirni and the oats is ofcourse the rice is replaced with oats but the sugar content is replaced with healthier and natural sweeteners making it quite irresistible to devour. If you have a sweet-tooth but have to refrain due to dietary restriction, you must try this recipe.Just follow the simple steps and nail this easy delight!
Ingredients
1/ 2 Cup rolled oats made into a fine powder(oats flour)
4-5 tablespoons jaggery powder*
3 cups milk
2 to 3 tablespoon crushed or broken nuts( almonds/ cashews/pistachios)
5-6 almonds, blanched and slivered
5-6 pistachios, blanched and slivered
A pinch of cardamom powder
8-10 saffron strands soaked in 1 tablespoon warm milk
*the jaggery amount can be increased based on the sweetness level one desires
Method
1. Bring milk to the boil in a pan.
2. Grind the rolled oats to a fine powder(oats flour) and set aside.
3. Once the milk starts boiling add the oats flour and keep stirring constantly to avoid any lumps.
4. Once the oats are cooked and the mixture is slightly thick, add jaggery and stir.
5. Mix the saffron in warm milk and add to the oats mixture.
6. Add the cardamom powder and the crushed nuts or the almond and pistachio slivers and remove from the heat.
6. Garnish with the remaining almond and pistachio slivers and refrigerate in your serving bowls for 2-3 hours. Serve chilled.
