Caramelised Lotus seeds/Sweet Makhana

Caramel Makhana/Sweet Makhana with Jaggery is a must try recipe for all the Caramel popcorn lovers and for those who miss their share of sweet and crunch. The sweet makhana needs only 3 simple ingredients-the makhana/fox nuts, powdered jaggery and  lastly some oil/ghee. 
The method is quite simple and straight-forward-
1.  Add 1 cup of Makhana and dry roast them on very low heat for 4-5 minutes until they are crisp(it is important that the makhana is crisp before we add the jaggery) , keep stirring them in between so that Makhana does not burn.
Note :To check if they are roasted properly just take one Makhana in hand and crush it, if it breaks nicely with a crunching sound that means they are done perfectly. 

2.Now transfer makhanas to a plate and let them cool.

3.Then add 2 teaspoon of ghee/oil and 1/4 cup powdered jaggery to the same pan.Heat it in low medium flame until jaggery starts to melt and it bubble's up nicely.Switch off the flame immediately and add in roasted phool makhana at this stage. 

4.Then mix it gently. Keep stirring continuously until the jaggery is well coated with makhana. Remove the pan from the stove once done. 
Cool it down and enjoy.
