Keto Pav Bhaji


Pav bhaji is a delicious blend of mashed veggies cooked in butter and spices and is a very popular street food in India. It is traditionally made with potatoes but this post will guide you how to make it with "no potatoes". You heard me right, this has no potatoes hence making it lowcarb and keto friendly. 
So lets dive into the ingredients  and make this delicious cious, lip-smacking Pav Bhaji. 
                             Serving 4 

                          
 Ingredients 
  500 g Cauliflower
  100 Tomatoes
  100 g cabbage
  100 g beans
  100 Green Bell Pepper
  100 Onions
  10 small cloves of Garlic 
   3 Tbsp Butter 
   Coriander for Garnishing 
                          

 Seasonings
  Pav Bhaji masala
  Turmeric powder 
  Kashmiri Red Chilli Powder 
  Cumin powder
  Kasuri Methi / Dried Fenugreek Leaves 
   Salt 

Method 

 Step 1
Seperate the florets of the cauliflower and  put the florets of the cauliflower, roughly chopped cabbage and chopped beans into a pressure cooker with some water( 2 to 2.5 cups), turmeric powder(pinch) and salt. 
Put the cooker on high till the first 2 whistles then reduce the gas to low  and cook it for another 5 to 6minutes. It took around 10minutes in total for me. Remove the cooker from the gas and let it cool. Allow the steam to escape using natural release method. After it cools down take a potato masher and mash the mix well. 


 Step 2 
In a pan heat a tablespoon of butter, add finely chopped garlic, chilli powder, salt, cumin powder, turmeric powder and Pav bhaji masala. Saute for just 45 sec to 1 minute for the rawness of the spices to reduce. 
                             
Step 3 
Add in the mashed mixture and cook for about 3 to 5 minutes on high after which transfer to another dish.
Keep aside.
                              
Step 4 
In the same pan add a tablespoon of butter followed by the finely chopped onion and saute till translucent. Add the finely chopped capsicum and tomato. After a couple of minutes add chilli powder,turmeric powder, cumin powder, salt and additional pav bhaji masala. Cook for 6 to 8 minutes or till tomatoes become soft.

  Step 5 
After cooking the mixture add it to the previous mashed mixture and mash it with the potato masher.
 Step 6
For the final touch, add the mixture to the pan. Cook it for a couple of minutes. Taste and add any of the missing spices. Crush some kasuri methi, add a dash of lime and generous amount of butter. Cook for  7 to 8  minutes. Remove from heat and garnish with some coriander and butter(optional). 
Serve hot with toasted bun or bread.
