Peanut Butter Salad

Low carb Modifications
I adapted the recipe to make it low carb hence limited the veggies to chopped cabbage, carrot, capsicum and onion (around 400 gms in total).
With seasonings remaining the same -
chaat masala
black pepper
chilly flakes/ chilli powder
salt to taste
a pinch of garlic and ginger powder
Oregano
*Slight changes of orange juice to lime juice (half a lime or less)
*Increasing the quantity of peanut butter to 1 tablespoon
*Hung curd to 2 to 3 Tbsp
*Honey to maple syrup
We have tried various versions with and without the sticky sweetner and both are equally good.
Method
*Blend peanut butter+ Hung Curd+ Seasonings(except oregano)
*Add lime juice, olive oil and sticky sweetener to the blended dressing and mix or blend again.
*Add a pinch of salt to the veggies before adding the dressing.
*Add the dressing, mix well
*Top it with some oregano, seeds, nuts and olives.
Serve cold 🥶
