Instant Ragi Appam| Ragi Appam| Millet Appam



Ragi Appam is a delicious and wholesome twist on the traditional appam, made with the goodness of finger millet (ragi). Soft, fluffy and beautifully earthy in flavour, these appams make a comforting breakfast or dinner that is both simple and nourishing. I love how the natural colour and rustic taste of ragi give this humble dish its own unique character. Paired with a creamy vegetable stew, coconut milk or even a simple curry, Ragi Appam makes for a wholesome meal that feels like a little taste of home.



Ingredients
Ragi flour- 1 1/2 cup
Cooked rice- 1/2 cup
Grated coconut- 1/2 cup
Instant yeast- 1/2 tsp+1/4 tsp
Sugar- 1/2 tbsp
Salt- 1/2 tsp
Lukewarm water- 2 cups

Note 
1 cup (125g) of flour, you'd use roughly 1/2 teaspoon of yeast

Preparation
*Grind to a smooth batter.Pour the batter to a large bowl.
*Let ferment for 2 hours in a warm place.
After 2 hours, the batter will have doubled in size & bubbles will appear.
*Place an appam pan over medium heat.Grease the pan with oil.Pour a large spoonful of the batter, swirl the pan & let the batter coat evenly on the pan.
If the batter is too thick, you can add 2 to 3 tbsp of water to make it thin.

*Close with the lid & cook for a few minutes.
*Open the lid, the edges will turn golden & crispy, will resemble a lace & the center will be soff.

*Using a spatula gently take the appam off the pan & transfer to a plate.

*This ragi appam has to be enjoyed while it's hot, along with your favourite curry.
